Friday Recipe - Nerissa Buckley

This week Nerissa Buckley, Executive Chef Manager at Rickmansworth is sharing one of her favourite recipes to cook at home.

Easy bacon and egg pie

This is a New Zealand Classic.

You will need:

  • One baking tin
  • One sheet ready rolled puff pastry
  • Twelve eggs
  • 500g bacon

Now to assemble:-

Lay pastry into tin so it covers the bottom and up the sides prick all over with a folk

Break the eggs in whole all over then chop the bacon (I use scissors) and distribute evenly sprinkle with salt and pepper

Pop in the oven for twenty five minutes on fan 180 c

This can be eaten hot or cold.
