Chocolate Banana Bread
3 Bananas, over ripe
115g Unsalted butter, melted
170g Brown Sugar
1 Tsp Vanilla
1 Tsp Baking Soda
¼ Tsp Salt
115g Cocoa Powder
225g Chocolate Chips
Preheat the oven to 175c and grease a 9x5” loaf tin.
Mash the bananas in a bowl. Whisk in the melted butter, then the sugar, egg and vanilla.
Sift the baking soda, flour, salt and cocoa into the mixture.
Combine the mixture with a wooden spoon then add the chocolate chips.
Pour the mix into the tin and sprinkle with the remaining chocolate.
Bake for 55 to 65 minutes, checking after 30 mins.
Cool in the tin for 10 minutes and then transfer to a cooling rack.
